The Finest Premium Mozzarella Cheese
Mozzarella was first made in Italy near Naples from the rich milk of water buffalos when cheese curds accidently fell into a pail of hot water in a cheese factory. Since the original mozzarella cheese was made from buffalo milk, not pasteurized cow milk, it had a short shelf-life so stayed in this region of Italy.
As refrigeration and transportation technology developed, mozzarella cheese spread to other regions of Italy. To this day, the best artisanal produced buffalo mozzarella cheese is still found south of Naples near Battipaglia and Caserta.
Continuing the long tradition of real mozzarella cheese, we use Bacio Premium Mozzarella Cheese for our hand-tossed, authentic NY brick oven pizzas because they produce a delicious, rich, buttery flavored 100% natural cheese specially made with premium Grade A milk and a Kiss of Buffalo Milk™, similar to the original mozzarella cheese formula.
If that's not enough, we use premium Polly-O® Ricotta Cheese for our white pizza sauce and inside of our calzones. Our cheese curds also come from Polly-O® which is why our homemade fresh mozzarella cheese we use on our margherita pizzas and caprese salads are so deliciously silky.
